Garonga Safari Camp and Little Garonga

Fruit of the Forest Pancakes & Mascarpone Cream

Serves 4-5



  • 3 eggs
  • 375 ml milk
  • 30 ml oil
  • 2 ml salt
  • 280 ml cake flour
  • Oil for cooking
  • 500g mixed berries
  • 125ml castor sugar
  • 60ml water
  • 200ml fresh cream
  • 100ml mascarpone cream cheese

Place the eggs, milk, flour and salt into a food processor beat until the mixture is quite smooth. Add the oil, mix well and strain into a jug. Cover and allow to stand in the fridge for 1 hour. Heat the berries, sugar and water in a pan and allow to develop into a semi syrup. Beat the fresh cream until soft peak the add the cheese. Take the pancake mixture from the refrigerator. Heat a drop of oil in a pan and when pan is hot fry your pancake mix in small amounts at a time. When the pancakes are ready place some of the berry mix in the middle and roll the pancake until closed then place a dollop of the mascarpone cream on top. Enjoy!
